Penfolds Bin 707 Cabernet Sauvignon

A perfect Cabernet Sauvignon representation of Penfolds ‘House Style’: intensely flavoured fruit; completion of fermentation and maturation in new oak; expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing. Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 (when fruit was directed to other wines) nor in 1981, 1995, 2000, 2003, 2011, 2017 or 2020 (when fruit of the required style and quality was not available). Full-bodied and with proven cellaring potential, Bin 707 retains a secure place among the ranks of Australia’s finest Cabernets.

When purchased in a case (6 bottles), this wine comes in a Penfolds branded wooden box.

Tasting notes

Nose:
Poured, swirled – persuasive Cabernet black olive, graphite and tapenade aromatics may initially relax Bin 707 style sceptics. Yet just when the guard is dropped, in creeps a scented wave of choc mint, Asian spices and sage/bay leaf botanicals. Taking no prisoners – a good measure of soot/ironstone/sump oil blackness, and a floral headiness of iris and dried hibiscus. Yes, a full-on, uncamouflaged Bin 707 aromatic assault. Not for the meek. Unashamedly 100% Cabernet, 100% new oak, 100% Penfolds.

Palate

All is convincingly redeemed on the palate. No stylistic retreat, yet engagingly a better understanding of what lies beneath … Texturally, a suppleness and tightness that is indeed profound. Fine long ripe tannins offer polish and a felt-like ‘attaque’. Perhaps trademark – a significant mid-palate and convincing length – synergising an amalgam of Cabernets (only) off the varied soils of Coonawarra/Barossa Valley/Padthaway/McLaren Vale. A base of ferrics and black-pudding/blood-sausage – laced with white milk-chocolate and red and black berry fruits. 100% new oak – thought about only when reminded. All Bin 707 boxes ticked, except one – time.

Penfolds Bin 389 Cabernet Shiraz

Bin 389 was often referred to as ‘Baby Grange’, in part because components of the wine are matured in the same barrels that held the previous vintage of Grange. First made in 1960 by the legendary Max Schubert, this was the wine that helped forge Penfolds reputation with red wine drinkers by combining the structure of Cabernet Sauvignon with the richness of Shiraz. Exemplifying the judicious balance of fruit and oak, Bin 389 highlights the generous mid-palate Penfolds is known for.

Tasting notes

Nose:
An “old school” Penfolds nose; a classic and comforting homage to our storied past. It opens with the rich, deep tones of mahogany and the refined scent of a cigar box. Sweet oak spices are neatly interlaced with a dusty character. This foundation is lifted by summer berries, offering a balance between richness and vitality. Baking spice is present alongside tart red currant and cranberry, while the aroma of fresh pastries rounds out the note.

Palate:
The palate is immediately enveloped by cocoa powder-like tannins — smooth yet profound in their impact. The wine boasts volumes of
Cabernet character, showcasing cool fruits that are well lifted and vibrant. A barrel ferment nuance adds depth without
overshadowing the fruit’s purity. Sourdough notes bring a rustic edge which complement the lush profiles of plum fruits, blackberry,
mulberry, wild cherries and more distinctly tart morello cherries.

To commemorate 200 years of history, TIME : SPACE Mastery took inspiration from past whisky masters and the variety of different cask styles available to create layers of complexity with incredible depth of aroma, texture and flavour.
Housed in a uniquely crafted circular vessel symbolising the circle of life and the ongoing journey from the past to the future, TIME : SPACE Mastery is a testament to The Macallan’s enduring legacy of excellence, and is presented in an extraordinary box featuring 200 spikes, inspired by traditional origami techniques.
A tribute to the whisky masters of the past, the current creators selected each cask at its peak maturation, selecting both European and American oak. The European oak, predominantly seasoned with sherry, imparts depth, dried fruits, and gentle spice, while American oak adds balance, offering a rounded sweetness to the profile.

Nose:
Sumptuous Medjool dates, sweet baked figs and rich milk chocolate accompanied by delicate hints of honey and tropical character, reminiscent of dried mango and ripe papaya. Encapsulated by complex sweet oak.

Palate
A real sweetness is evident with sherry-seasoned dry fruits, orange marmalade and honeycomb. Soft spiced notes of ginger and cinnamon develop.

Finish
Bursts of caramelised pineapple and creamy vanilla linger with the exquisite balance of subtle dark chocolate and coffee.

TASTING NOTES:
Deep black color with violets highlights.
The nose is complex, reveals aromas of black fruit, such as blackberries and black cherries, and figs on a background of mild spices and subtle cocoa notes.
On the palate, the wine is dense and velvety, supported by fleshy and powerful tannins. The range of aromas gradually reveals itself, leading to an extremely flavorsome finish. A very balanced wine that expresses itself
with subtlety.

The most sought after bottle in the small batch Journey Series whisky - A blended malt Scotch whisky from Hunter Laing made with spirit from the esteemed and distinctive distilleries of Campbeltown: Glen Scotia, Springbank, and Glengyle.
Rumors has it that the liquid is currently unavailable and will not be restocked for a few years.
Matured in ex-bourbon barrels, and bottled at natural color and non-chill filtration. 
The specific seaside region of Campbeltown is known for its unique maritime influences, bringing soft briny / salty notes and a crisp, clean taste.
👅 Tasting notes:
Fresh, lively and fruity on the nose with pineapple, orange, honeysuckle and vanilla pods. Very clean and sweet on the palate with a touch of lemon meringue pie and honey. The sweetest of oak lingers softly on the finish.
