Verve Wine New York, and our sister restaurant, One White Street and Chef Galen at the helm, had the distinct privilege of hosting Edouard Vauthier and the fabled wines of Château Ausone, as we journeyed through the family’s sacred hillside vineyards of Saint-Emilion.
Not too many properties in the world of wine can boost a history that dates-back to the Roman poet Ausonius or 400 years after Christ. And if that wasn’t inspiring enough, it is the Vauthier family that has been producing wine here since 1690, and it is under the leadership and vineyard management of Alain (Vauthier), and his children, that Ausone has truly achieved a true and pinnacle expression of place.
There is a magical lift and elegance to the wines from the cherished limestone grounds that is simply not equaled. However, for the Vautheir family, it does not end with the Grand Vin and Ausone. The family delivers the same kind of traditional and passionate care across all their Domaines and wines – Moulin Saint George, Fonbel, Chapelle d’Ausone, and one that now demands to be experienced in our humble opinion, La Clotte.
