Traced back to the 17th century, this estate is today led by Charles Ballot, who represents the 15th generation of his family in Meursault. Since taking over the cellars in 2001, Charles has quietly spearheaded a quiet revolution. He shifted to organic farming, lowered yields, dialed back new oak, and introduced a touch of matchstick reduction to protect the purity of his fruit.
The result? Textural, deeply concentrated Chardonnay balanced by thrilling acidity and razor-sharp mineral cut. Charles Ballot has elevated this historic estate into the upper echelon of the Côte de Beaune.

Assembling fruit from seven distinct village-level parcels across Meursault, this wine is a masterclass in regional typicity. Having taken over his family’s 10-hectare domain in Mercurey in 1997 after a successful career as an international cooperage consultant and winemaker across the globe, Bruno Lorenzon brought a revolutionary mindset back to his native terroir. His background in cooperage (tonnellerie) gives him a unique mastery over wood integration—he personally selects, dries, and crafts his own barrels to ensure the oak frames the fruit with absolute transparency.

Located on the way to the Combe de Lavaux, next to the estate of his cousin Bernard Dugat-Py, Emmanuel aka “Manou” is the fourth generation of vignerons to tend the Humbert family estate. He took over the Domaine from his parents in 1989 with his brother (who has now retired) and since then, they have been quietly and steadily improving the quality of their wines, crafting potions that are focused, serious, complex, and characterful.
Emmanuel is the dynamic force behind this domaine: he is a thoughtful and passionate man with a great love for wine, food and rugby. He is well connected in the village of Gevrey-Chambertin, where he can count on a wealth of accumulated winemaking experience from his relations and friends. His nephew Pierre-Yves Humbert joined in 2017 to support him both in the vineyards and for the vinification.Today they produce wines which reflect their dedicated effort and experience of over 30 vintages.

To kick off our spotlight, we are pulling two heavy-hitting, monumental bottles from the legendary 2019 and 2020 vintages:

🍒 Gevrey-Chambertin 1er Cru “Poissenots” 2020
Tucked away in the coolest Premier Cru pocket of the commune on shallow soils rich in active calcium, “Poissenots” is famous for its bright, mineral tension. The powerful, highly concentrated 2020 vintage gives this wine an incredibly deep voice. It opens with high-toned aromas of black cherry, wild violets, and crushed wet stones. On the palate, it delivers a massive core of dark fruit beautifully framed by a refined, mineral drive and a salty, long-lived finish.

👑 Charmes-Chambertin Grand Cru 2019
The ultimate crown jewel of the estate. Humbert’s tiny holding in this iconic Grand Cru was treated to a spectacular, sun-kissed growing season in 2019, yielding a wine of extraordinary depth. It is opulent, showing layers of rich dark plum, exotic spices, leather, and black tea. For all its density and structural foreboding, the tannins are incredibly suave, leading into a majestic, endless finish.

🍋 Meursault “Grands Charrons” 2022
“Grands Charrons” is widely regarded as one of the finest lieux-dits (village vineyards) in Meursault, sitting on deep, limestone-rich soils. The 2022 expression is incredibly charming right out of the gate. It bursts with aromas of ripe green apple, white peach, and white flowers, subtly framed by a trace of roasted nuts. On the palate, it’s beautifully fleshy and expansive, but balanced by a clean, chalky, and mouthwatering mineral finish.

🍯 Meursault 1er Cru “Charmes” 2022
This is pure, unadulterated Meursault luxury. Sourced from the upper slopes of the iconic Les Charmes Premier Cru, this bottle is a showstopper. The 2022 vintage is wonderfully aromatic, unfurling layers of candied citrus peel, orange blossom, fresh brioche, and crushed stones. It is voluptuous, deep, and multidimensional on the palate, yet perfectly corralled by a vibrant electric energy that carries into a remarkably long, salty finish.

Philippe Chavy carved out his own path in 2002 by combining the family vineyards. Managing a boutique 8 hectares of exceptional vine estate, Philippe practices careful sustainable viticulture, maintaining old vines that dig deep into the classic clay-limestone soils.

In the cellar, Philippe is a perfectionist. He relies on gentle pneumatic pressing, natural settling, and a highly measured use of new oak to ensure that the unique voice of each climat sings loudly in the glass. Located on the steep, rocky slope directly bordering the Grand Cru hill of Montrachet, this vineyard name literally translates to “Mounds of Dog’s Teeth”—hinting at the sharp, stony limestone conditions. The sun-kissed 2022 vintage gives this wine an unforgettable presence. It bursts with aromas of ripe lemon oil, white flowers, and crunchy green apple, all wrapped in a dense, deeply saline, chalky structure.

🧈 Meursault 1er Cru “Charmes” 2021
Moving over to Meursault, the 2021 vintage gave us whites with remarkable freshness and classic definition. From one of the most famous Premier Cru plots in the Côte de Beaune, Chavy’s “Charmes” is pure luxury. It opens seamlessly with layers of fresh orchard fruits, toasted almonds, and a faint hint of pastry cream. On the palate, it’s beautifully voluminous and textural, yet perfectly corralled by a vibrant, racy spine of mouthwatering acidity.

While the Fèvre name is synonymous with the history of Chablis, Nathalie and Gilles struck out to establish their own estate in 2004. Today, alongside their talented winemaker daughter Julie, they manage 50 hectares of prime estate vineyards right in the heart of Fontenay-Près-Chablis.

Their philosophy is simple: let the classic Kimmeridgian limestone do the talking. Using entirely temperature-controlled stainless steel for their core range, they preserve that intense, crunchy, oyster-shell energy that makes Chablis one of the world’s most unique expressions of Chardonnay.

To highlight this month’s spotlight, we are pouring two stunning releases from the magnificent, highly balanced 2022 vintage:

🦪 Chablis “Vieilles Vignes” 2022
Sourced from an exceptional selection of vines over 50 years old (some planted by Nathalie’s great-grandfather in the 1950s!), this Vieilles Vignes bottle delivers an incredible depth of flavor. Think standard village Chablis but turned up to eleven. It offers a gorgeously aromatic nose of white peach, lemon oil, and white flowers, balanced by a dense, saline, and intensely mineral finish.

🍋 Chablis 1er Cru “Fourchaume” 2022
Fourchaume is one of Chablis’ most famous Premier Cru vineyards, known for capturing the morning sun on long, steep slopes. Fèvre’s expression is rich and voluminous yet retains an energetic core of electric lime acidity. It opens with notes of crisp green apple, crushed stones, and a succulent, pithy finish. It’s incredibly long and complex.

An evening of pure luminosity and precision! We recently gathered at the 2-star Michelin Ying Jee Club in the heart of Hong Kong for a breathtaking exploration of Salon and Delamotte.

It was a privilege to have Grégoire Piochon, Export Head for APAC & Middle East, host the evening. His storytelling and expertise brought the unique terroir of Le Mesnil-sur-Oger to life, perfectly complementing the exquisite Cantonese craftsmanship of Ying Jee Club.
