Camille and Guillaume Boillot are doing something quietly exciting in Meursault. Guillaume spent more than a decade at his father's domaine — Henri Boillot, a name most Burgundy drinkers know well — before stepping away to focus on this project with his wife Camille. Working out of a small cellar, they farm plots across Meursault, Puligny-Montrachet, and Pommard. The whites have real tension and cut; the reds are silky without being soft.
