Following an 8000-year old tradition, no machines are used in the production process. For generations, our family has been producing wine for its own needs, following the traditional Georgian method. Each family here has their own approach to produce their wine. Even though the production method is always the same, each winemaker preserves a secret of its manufacture. One might only produce on cer

tain weekdays in autumn. Another schedules the harvest to a certain time of the day. And for some families, high sensitivity is demanded to decant the wine during the fermentation process with either clay carafes containing no more than 2 litres or small squash vessels. In addition to using this over generations accumulated knowledge, we have also consulted our oldest wine master, Kolia Saneblidze The 84-year old has already been producing wine for 70 years. His knowledge about the Georgian grapes’ particularities and the wines’ characters is an extraordinary enrichment for the production process of our Vazis Xidi wines.
