Production

The Nero d'Avola grapes are sourced from the area around Salemi (Province of Trapani) in the north-west tip of Sicily. The vines are Guyot-trained, and grown at around 250m altitude on a combination of soil types. The vineyards were converted to organic viticulture in 2007. The grapes are macerated on the skins for 8-12 days, then racked and allowed to complete malolactic fermentation.

Tasting notes

Ripe aromas of black fruit and a hint of spice. The palate is full of rich plum and bramble fruit characters, hints of dark chocolate and cherry compote. A generous and substantial wine with plump tannins balanced by fresh acidity.

Production

Gamay vines grown on the slopes of the rolling Beaujolais hills. Whole bunch Gamay is fermented using traditional carbonic maceration techniques. A short cuvaison is used in order to keep the up-front, juicy, fruit characters.

Tasting notes

Juicy, super ripe Gamay fruit with flavours of summer fruit compote, typically vibrant acidity and a soft, approachable finish.

Food match

Good with a charcuterie platter, BBQ sausages or even a hearty salad; try the regional salade Beaujolaise - a poached egg with fried bacon strips on green salad ...and don't forget the garlic!

Production
An unique take on Pinot Noir from two growers' plantings in the sun drenched vineyards of the Southern Languedoc. Picked at optimum ripeness, balancing phenolics and acidity then cool vinified to enhance the fresh fruit flavours. No oak was used to keep this wine as pure and sensual as possible.

Tasting notes
Fuller than Pinot Noir from Burgundy, it has a warm, rich nose with aromas of black cherry compote. The palate is nicely balanced with an exciting, savoury streak provided by ripe, tasty tannins.

Food match
Served slightly chilled, Le Fou is lovely with grilled lamb, cold meats, wild mushroom risotto or home-baked ham.

Production

Julien and Clément manage 20 hectares of vines across 60 different parcels, three quarters of which are Sauvignon Blanc and one quarter Pinot Noir. Soils are primarily the classic ‘terres blanches’ clay-chalk, a heavier soil which gives the wines a ripe fruit character, and some 'caillottes', a form of limestone. A very modern, well-equipped, stainless steel cellar allows them to control the temperature of the wines during fermentation and later storage in tank prior to bottling to retain the freshness of the fruit characters. The grapes for this cuvée are a blend from all of the Raimbault's parcels of Sauvignon Blanc, and the wine is aged in stainless steel for ten months on its lees.

Tasting notes

A classic Sancerre with crisp, crunchy grapefruit and lime citrus flavours and a gently herbaceous element adding complexity. There is a mouthwatering, saline minerality to the long finish. Just brilliant.

Food match

Fish, shellfish of course, white meats, salads and most vegetarian dishes.

Production

The Sauvignon Blanc grapes are grown in three excellent sites across the Leyda and San Antonio D.O., close to the town named after a legendary shipwreck, Las Cruces. The proximity of the vineyards to the Pacific Ocean (only 10km’s away) and its fresh coastal breezes ensures grapes ripen slowly. This allows the grapes to retain their natural citrus flavours and freshness but also to develop great aromatics. Sauvignon Blanc grapes in Leyda are some of the first to be harvested in Chile, and winemaking is simple to preserve this crunchy, bright fruit. Cool fermentation in stainless steel is followed by a couple of months on their fine lees which adds texture and depth. We bottle early to retain the primary characters, flavours and freshness of this enchanting fruit.

Tasting notes

A sensory delight. Pale yellow with green highlights. It shows intense aromas of pure pink grapefruit, peach and a herbacious nettley character. The zesty palate is vibrant with lots of citrus and stone fruit flavours, crunchy texture and a delightful mouthwatering finish.

Food match

Great with shellfish or with some good old fish and chips!

This is our homage to the classic margarita. The classic Mexican cocktail made with fresh lime, tequila and triple sec (orange liqueur).

Not to be confused with flavoured and frozen margaritas often served in giant glasses, the classic straight up margarita is a much more refined and balanced drink. Shortier, punchier and balanced between the sweetness of the orange liqueur, the sourness of the lime and the herbaceous tequila.

Drink chilled from the can, or serve in a nick & nora or a coupe glass with a lime wedge garnish. For an added touch, wet the edge of the glass with the lime and roll the edge over salt.

Tasting Notes: Aromas of blackberry jam, cedar & a hit of cardamom. Flavors of plum, black cherry Jolly Ranchers and other dark fruits. Tannins start gracefully and become dusty and pronounced towards the finish. Lush, sweet fruits in the midpalate carry well into the finish thanks to a thread of acidity.

Food Match: Classic steak wine with the depth of flavors to bring out the best in a ribeye while cutting through the fat. Also try pairing with polish sausages or a hearty pasta dish slathered in a tomato-based sauce.

Our History

Opening in December 2019 in both Harpenden and Berkhamsted, our stores are perfectly located for you to get drinks, flowers and snacks on your way home from work or to buy a refreshing drink for your journey into London. We also currently serve Smoothies to morning commuters and the team are reviewing healthy breakfast options going forward.
