One of our Volunteers has offered a solution to the "courgette glut", supplying a recipe and costing out ingredients, available from the Shop -
Courgette Fritters
● courgette,120g coarsely grated
● sea salt pinch
● egg one large
● self raising flour 3 tablespoons
● smoked prapika teaspoon (not essential just adds to the taste)
● peas,50g fresh or thawed frozen
● vegetable oil, for frying
● black pepper freshly ground
● Bouillon,( instead of salt.)
Method
Season the courgette with sea salt and set aside. (You can use a soup bouillon as an alternative to salt).
Whisk together the egg, flour and in a large bowl and season with black pepper.
Squeeze the excess water out of the courgette over the sink, then add the courgette and peas to the batter.
Heat enough oil to just cover the bottom of a large frying pan, over a medium-high heat. When the oil just shimmers, drop in heaped tablespoons of the courgette mixture, flattening them with the back of the spoon to make fritters.
Fry each one for 1–2 minutes, or until golden-brown on each side. If you need to cook in batches in a smaller pan, set the fritters to drain on a plate lined with kitchen paper.
I usually make a lot of these and freeze them. It's a good way of utilizing excess courgettes.
I also make courgette and tomato soup, but that's another story.
