Using carefully selected grapes, this wine was made by our neighbours, Domaine Saint Hilaire – les Voisins - to our own exacting specification.

Grape Varieties
Vermentino 70%
Viognier 30%

Soil
Clay/limestone

Harvest
Machine harvested at night and at early dawn to ensure the temperature of the grapes is as low as possible to minimise any risk of oxidisation when the grapes are pressed.

Vinification
Immediate pressing then settling at a low temperature over 48 hours before temperature- controlled fermentation

over 25-30 days using specially selected yeasts.

Ageing
In tank on fine lees for 1-2 months before ageing in a stainless-steel tank for 3 months before bottling.

Alcohol
13.5% abv

Appearance
Pale with a tinge of green.

Nose
Aromas of citrus and pineapple with some bright notes of acacia flowers and apricot.

Palate
This wine’s full body is well-balanced by a crisp freshness. Its lengthy finish draws on citrus fruits such as kumquat and pomelo.

Food pairing
A delightful accompaniment to seafood and dishes with herb sauces.

Hand harvested and selected grapes are vinified in steel cuves before being bottled and made according to the Traditional Method. Aged on the lees for 12 months with a dosage of 7gms/ltr.

Tasting notes
Fine elegant bubbles with white fleshed fruit flavours and a touch of hazelnut and almond. Crisp, clean with a touch of green apple tartness.

Food match

Moon Juice was one of the first special beers we produced, and was brewed using a big whack of Nectaron, which back in 2022 was the brand new hype hop. In 2023 we brewed it again, and it was extremely popular, building on the success of the original brew. Now it's back, but this time SUPPED up with a refreshed label, and the precision of our bigger brew kit. Originally featuring all New Zealand hops, Motueka and Nectaron, this newer version takes advantage of the even newer and punchier variety of Azacca; Azacca CGX, alongside the biggest stars of the show; Motueka and Nectaron CRYO. It's an absolute creamer of an IPA, with some of the thickest hop aromas we've ever gotten from a Bluntrock beer. Thanks to the elite hop varieties, you can expect divine aromas of passionfruit, pineapple, and peach flesh, all rounded off with a pillow-soft body. This is another collaboration with our friends at Estuary Brewing Co - the first batch being brewed with them after Scott reached out to see if we wanted to do a collab while he was in Cornwall for a kitesurf demo at our local beach, Daymer Bay. With Hugo already being a kitesurfer, it was an easy yes, and the day naturally rolled into a pumping Taproom afterparty. 6.2%abv

Production
Syrah was planted over 16 years ago in the foothills of the Moncayo, 600-700m above sea level. The vines take full advantage of their position - limestone soil, sun and the Cierzo wind which blows from the north-west to freshen the grapes. The grapes are macerated for 4-5 days, and then fermentation takes place for 15-20 days in stainless steel tanks at controlled temperatures. 60% remains in stainless steel, whilst the other 40% matures in new American oak for 12 months.

Tasting notes
Intense aromas of rpe black fruits, sweet blackcurrant with hints of coffee and warm vanilla. The palate has wild blackberries, toasty oak and black pepper notes - rich and powerful yet with good balancing acidity and a long serious finish.

Food match
Typically serve with roasted and grilled lamb or beef, but can also good with pork belly and duck.

Powered rose petal.

Nose
Pomelo, cherry, pink peppercorns.

On the palate
Fresh and refreshing, full mouth feel. Excellent length allowing the wine to the enjoyed with a meal or as an aperitif.

Accord mets/vins
Serve at between 8oC and 10oC. Ideal as an aperitif alongside a black olive tapenade, this rosé can also be enjoyed with grilled meats, Mediterranean cuisine or a dessert such as a strawberry tart.

Our distinctive Rosé is a sparkling for all seasons. It's characteristically complex, combining red-fruit flavours with spice, minerality and balanced acidity. It's incredibly versatile when it comes to food matching. try alongside richer fish, lighter meat and game dishes such as grilled prawns in a butter sauce or pork belly with caramelised apples.
