Production

The grapes are sourced from pergola-trained Albariño vines, cultivated in sandy soils in the Salnés Valley. They are selected in the vineyard and hand-harvested into 20kg crates, then further sorted at the winery. The destemmed grapes are pressed, and fermentation takes place for around 15 days at 16-18ºC using wild yeasts. Partial malolactic fermenatation occurs, again with naturally-occuring yeasts.

Tasting notes

A fresh and bright Albariño with notes of stone fruit and orange blossom. Peach fruit with lightly tropical notes and mouthwatering citrus zest character on the palate, dry and crisp on the finish.

The Glera grapes are sourced from organically farmed vineyards in Veneto, overlooked by the Dolomites. They're hand-harvested at the end of September from Guyot-trained vines, which are planted in well-draining, fairly stony soils. Stainless steel fermentation keeps the wine light and fruity, and the second fermentation takes place in tank.

Tasting notes
Soft and delicate fruit and floral aromas give way to peach notes on the palate, with an appealing texture and fresh finish.

Food match
Perfect aperitif wine, or serve with light salads and starters.

A ‘named’ Côtes du Rhône Villages since 1967, Cairanne was granted ‘cru’ appellation status in 2016, in recognition of the quality of the wines and terroir. Located in the heart of the southern Rhône valley, to the east of Orange, its 1,087ha of vineyards lie between the two Rhône tributaries of Ayges and Ouvèze, rising from the alluvial valley floor to the hillside slopes of La Monté de Ventabren. On the various soils of this Mistral buffeted hill are to be found the majority of Domaine Boutinot’s vineyards with La Pauline and Les Six Terrasses, two of the appellation’s best plots, nudging the summit. Both are broad terraces of ‘argilo-calcaire’ - heat retaining limestone pebbles over water-retentive clay. The pebbles help maintain diurnal temperature variances and aid ripening, while the roots find water in the clay to sustain the vines during the summer growing season. As with all Domaine Boutinot’s plots they are managed by minimal intervention and both vineyards benefit from all-day sun and the cleansing Mistral winds. Planted mostly in 1969, the old bush vine Grenache Noir ripens slowly and evenly to produce low yields of deeply concentrated grapes, all harvested by hand into small baskets and destined to form a significant part of the blend of La Côte Sauvage. Vinification is traditional, in open-topped tronconique (6,000l oak vats) and using only the natural yeasts present on the grapes, with long cuvaison, gentle remontage and manual pigeage. Parcels of Grenache Noir, Syrah, Carignan and Mourvèdre are then selected to be matured for twenty two months in French oak, a combination of 228l barrels and 600l demi-muids of differing ages, carefully chosen so that the oak is integrated and the wine retains the finesse for which Cairanne is noted. Selecting the final assemblage of La Côte Sauvage involves tasting each barrel and each demi-muid (at least 110 barrels) to create this luxuriously elegant wine.

Tasting notes

A serious, opulent and complex example of cru Cairanne. This is rich, intense and drenched in dark red fruits. With morello cherry and a touch of cinnamon spice on the nose, soft dark plummy fruit, liquorice, chocolate, a hint of black tea on the palate, this wine is full flavoured and smooth with supple tannins. A rich, savoury satisfying mouthful that shows greater elegance with air.

Food match

Rich, complex and delicious with dishes which take time to prepare: a slow cooked duck cassoulet, or warming beef casserole – try a Daube Niçoise, the southern French variation of the traditional beef daube which includes tomato, orange zest and black olives. Hearty vegetable dishes can work too – grilled aubergine with a herby tomato Provençal sauce or a tofu burger with all the trimmings.

Verdant Originals Season is here! For a few weeks, and just like last year, we’re resurrecting OG Verdant classics, some of which haven’t been seen in years. Verdant Originals celebrates our journey, paying homage to the beers that helped shape Verdant, and offers a chance to experience these iconic brews once again. Show Me What’s What (IPA 6.5%) Last seen in the spring of 2022. We have particularly fond memories of pouring this one at the Van Moll festival in the Netherlands during the summer of 2022. If you like your IPAs bright, zesty, and resinous, this is for you. A beautiful combo of old school and new school American hops (think Idaho7, Centennial and Ekuanot) mixed with some of the best NZ hops around (Nelson Sauvin and Motueka). Imagine pine needles soaked in the juices of fresh lemons, limes and grapefruits! LOVELY!

Wildeberg’s rationale is to source the finest vineyards available to us across Franschhoek and the Coastal Region, from which cuvées the eyes are plucked to make Wildeberg and the Terroir Series releases. In doing so there remains a small yet definitive expression of all the vineyards we worked with, and its these cuvees that are again selected to go into Coterie by Wildeberg. All fruit is hand-harvested in February from selected sites in Franschhoek and Paarl. Both cultivars are fermented whole bunch, with some whole berry fruit, there is no crush, just a daily pump over during the natural fermentation. We want to express place over cultivar so this slow, gentle extraction gives wines truer of origin than winery. The components are racked to French and Austrian oak, new and old, for 10 months before the blend is decided. This blend is then allowed to marry for 6 weeks prior to coarse filtration and bottling on the farm.

Tasting notes

With notes of freshly cracked black pepper, allspice and raspberry, the varietal notes of each cultivar blend seamlessly in this exotic, aromatic Coastal Region compote.
