Meet The Hungry Wasp range of wines, born from nature’s most unlikely collaborator. While we raise a glass to flavour, the wasp is out in the vineyard quietly shaping it. These tiny vineyard visitors are essential to wine’s origin story. How? They carry and protect Saccharomyces cerevisiae in their stomachs — the wild yeast that kickstarts fermentation and transforms humble grapes into young, expressive wine. Scientists from the University of Florence discovered that wasps are the yeast’s winter sanctuary, reintroducing it to vineyards in spring. Without this microscopic hitchhiker, grapes couldn’t become wine.
