Holyrood Distillery marks a historic return of single malt production to central Edinburgh, the first since 1925. Nestled in the city's Old Town, beneath the towering Salisbury Crags, this distillery was established in 2019 by Canadian whisky enthusiasts Rob and Kelly Carpenter, alongside former Macallan master distiller David Robertson. Housed in a revitalized 'engine shed' once part of the Innocent Railway, it preserves its industrial charm.

While contributing to Edinburgh's whisky revival, Holyrood Distillery has also built a reputation for crafting exceptional gins and rums, including Height of Arrows and Elizabeth Yard.
