🐇 Nito – The Spirit of “Chasing Two Rabbits” in Aichi
Nito is the premium sake brand of Maruishi Jozo, a brewery in Okazaki, Aichi Prefecture.
The name “Nito” (二兎) means “Two Rabbits”, based on the philosophy:
Only those who pursue two things at the same time can truly catch both.
Aichi is blessed with pure water and a long brewing tradition. It’s also where the rare Banzai rice has been revived through local community efforts, with Maruishi turning it into a unique sake expression.
🌾 Nito Banzai 70 – Junmai with Revived Banzai Rice
• Polishing Ratio: 70%
• Taste: Elegant and gentle with light muscat aroma, followed by a harmonious blend of sweetness, acidity, spice, and umami, ending smooth and refreshing.
• Personality: Easy to drink, evolving subtly with temperature and after opening.

🍒Nito Omachi 48 – Junmai Daiginjo from Premium Bizen Omachi
• Rice: Bizen Omachi, polished to 48%
• Taste: Captures the rich yet refined character of Omachi rice — light cherry aroma, gentle sweetness, fruity notes of apple and Asian pear, with a fine, balanced acidity and a clean yet lingering finish.
• Food Pairing: Oily skewers, baked oysters with cheese, ajillo, and rich meat dishes.
