🐇 Nito – The Spirit of “Chasing Two Rabbits” in Aichi

Nito is the premium sake brand of Maruishi Jozo, a brewery in Okazaki, Aichi Prefecture.
The name “Nito” (二兎) means “Two Rabbits”, based on the philosophy:

Only those who pursue two things at the same time can truly catch both.

Aichi is blessed with pure water and a long brewing tradition. It’s also where the rare Banzai rice has been revived through local community efforts, with Maruishi turning it into a unique sake expression.

🍶 Sake Ginza Bed Time Story ⭐️

Today, let’s dive into the “once upon a time” of three distinctive sake-making methods — each with centuries of tradition and unique flavour profiles.

1️⃣ Kijoshu – The Sweet Luxury
Born in the late 1970s from an ancient brewing idea, Kijoshu replaces some of the brewing water with sake itself. This creates a richer, sweeter style with layers of umami and a velvety texture — perfect for dessert or slow sipping.

2️⃣ Kimoto – The Classic Starter
Dating back over 300 years, Kimoto is the original starter method. Brewers use wooden poles to vigorously mash rice and water, nurturing natural lactic acid. This long, hands-on process creates deep, complex flavours with a clean finish.

3️⃣ Yamahai – The Wild Cousin
An evolution of Kimoto from the early 1900s, Yamahai skips the pole mashing and lets nature do more of the work. It encourages wild yeasts and bacteria, producing bolder, earthier, and often slightly gamier sake.
